Of all the Christmas cookies in the lists of possibilities, the thumbprint cookie recipe from my Grandmother is on the top 3 list for sure, sharing this title with gingerbread and homemade chocolates. There are so many Christmas cookie recipes on the internet and this one to me is a winner for several reasons: it is delicious, it is pretty and it is easy! There are only 5 ingredients in this recipe and they can be whipped up very quickly. Give these yummy thumbprint cookies away as gifts and make them festive with some colorful napkins and reusable tins from the kitchen store.
1 cup unsalted butter, softened to room temperature
2/3 cup granulated sugar
1 teaspoon pure vanilla extract
2 cups all purpose flour
1/2 cup raspberry jam
With a handheld or standing mixer, beat together the butter, sugar and vanilla until creamy.
Slowly add in the flour and continue to mix on medium until all the flour is incorporated.
Cover and chill in fridge for 30 minutes to 1 hour.
*Note - I have made these without chilling and they are delicious, so if in a rush, or very hungry - simply roll into balls immediately.
Remove from fridge and use a teaspoon to make small balls.
Press down the center with the end of a wooden spoon, or a clean thumb.
Fill the hole with jam.
Bake at 350F for 12 - 16 minute or until golden.
Let cool and store in airtight container on the counter.
